Are you talking about Japanese producers, or tracks with Japanese vocals in them?
If the former, then Yoji Biomehanika is a famous one. His stuff's a bit hard for my liking, but he is talented.
In the latter, then there are boatloads of famous producers who have remixed "the Japanese Madonna", Ayumi Hamasaki. You could try M (Above & Beyond Mix), Dear My Friend (Svenson & Gielen Remix), Depend of You (Svenson & Gielen Remix), Whatever (Ferry Corsten Remix), Trauma (Dumonde Remix), or Audience (Darren Tate Remix), to name a few.
